We have a "fast food" place here in Eugene called Cafe Yumm. They are known for what is called their Yumm Sauce. I have to say it's name fits perfect. It's super yummy.
Unfortuantly I do not live in Eugene and so I can't go and get it whenever I want. It is super simple to make though at home. Some of the ingredients are not things I normally have at home but they can be found at almost any grocery store. The biggest ingredient that I most defiantly don't always have at home is tofu. It is not something I really like all that much unless it's been fried and I don't like fried food. The other ingredient that isn't in a common kitchen is nutritional yeast. I buy it in bulk from fred meyer. It isn't your normal yeast so don't try and substitute. You need nutritional yeast. It's a yellow powder. You can get it in large flakes or fine flake. I buy fine flake because the only thing I use it for is yumm sauce.
The big complaints about homemade yumm sauce is it's grainier. I don't really have a problem with that since it goes on a food with so many other textures. However, if you have a vitamin (I do not) I bet you can probably get it pretty creamy.
Here's what you need:
1/2 cup water
1/2 cup freshly squeezed lemon juice
1/2 cup of oil (last time I was out of canola oil like most recipes called for so I used olive oil. It was still just as good. Most people recommend canola oil or grape seed oil)
1/2 cup almonds ground into a powder (I use my magic bullet)
1/3 cup of nutritional yeast
1/2 cup garbanzo beans (if you make sure the skins are off it will help with the texture if you want it smoother)
1/3 cup tofu (I use extra firm)
2 cloves of garlic
1/2 tsp. salt
1 1/2 tsp. curry powder
1 tsp. dried oregano (most recipes call fro dried but I used fresh)
1 tsp. cilantro (most recipes call for dried but I used fresh)
Simply put everything in the food processor and blend till it's a liquid and light yellow color. For the best flavor let it sit in the fridge for at least 12 hours. Normally I can't wait that long.
Now the question is what's in a yumm bowl? The classic yumm bowl has;
Brown Rice
Black Beans
Fresh diced tomatoes
Avocado slices
Shredded Cheddar Cheese
Sliced black olives
Salsa
Fresh chopped cilantro
A Dollop of Sour Cream
I love the original yumm bowl but I can eat this sauce on anything. I like it on my eggs, on chicken, anything honestly.
Be careful though. This sauce goes a long way. It's super good for you but it does have a lot of fat in it. 1 Tablespoon has about 70ish calories and about 7 grams of fat.
