Meal 2
Grilled Quinoa-Feta Burgers
Spring Lettuce with Tomato Salad
1 cup quinoa uncooked
15 oz. can black or kidney beans, drained and rinsed
6 chopped green onions
1 carrot finely grated
2 tbs. Fresh parsley chopped
3 tbs. crumbled feta cheese
1 egg beaten
salt to taste
sweet onion sliced into rings for topping
2 tbs. olive oil
6 whole wheat buns
whole grain mustard

cook quinoa according to directions. 
Mash beans into a thick paste in a bowl. Mix in green onions, 
carrot, cooked quinoa, parsley, get cheese, egg and salt. 
Shame the mixture into 6 patties; cover and chill 30 min. 
Heat grill to medium high. Cook 5 minutes on each 
side or until golden brown. 
Drizzle onions rings with olive oil and then grill
 onions until tender and charred.

Moroccan-Braised Chicken Thighs
Couscous & Lemony Zucchini
2 lb. chicken thighs
salt and pepper to taste
1 tbs. olive oil
2 tbs. minced garlic
1 tsp. ground cumin
1 tsp. turmeric
1 tsp. ground ginger
1 1/2 cups chicken broth

Sprinkle chicken thighs with salt and pepper.
 Heat 1 tbs. oil in a large skillet. Brown chicken. 
Place chicken in slow cooker with the rest of the 
ingredients and cook on low for 5 hours. 

7.6 oz. box of couscous
4 zucchini
1 tbs. olive oil
salt and pepper
1 tbs. minced garlic
1 tsp. lemon rind
1 tsp. lemon juice

Cook couscous. cut zucchini into sticks. 
Heat oil in a large nonstick skillet. Add zucchini; 
sprinkle with salt and pepper. Saute for about
5 minutes or until lightly brown. Add garlic; cook 
until tender. Add lemon rind and juice cook for another 
minute until zucchini is tender.
