Why would I write a post about tahini paste? Well because I am going to follow this post with a recipe for hummus. Tahini paste is one of the few ingredients in hummus. You can buy it at the store but it is rather expensive and you get a massive container of it. Likelihood is that it will go bad before you use all of it. It you look at the ingredients on the back it is sesame seeds and oil. Yep that's it! So if you are making hummus here's how you make Tahini Paste.
Place 1 cup of sesame seeds in a sauté pan. (When you buy Tahini paste from the store they use hulled sesame seeds. Unhulled seeds have more nutrients.)
You are going to roast them till they are slightly browned. Don't burn them! Watch them they will burn easily. (I didn't watch them very well the first time)
Once the sesame seeds have been roasted you want to allow them to cool. Once they are cool place them in a food processor with 4 Tbs. of olive oil. Process till they become a paste. Add more olive oil accordingly.
