I love roasted Red Peppers. Actually I like anything roasted. This dinner made me feel so good and healthy inside. They say that the more colorful your plate is the healthier it is. This plate of food looks pretty darn healthy. And the colors are just amazing.
Now that you have all drooled on your computer because of the pictures here's the recipe.
Like the title says you are going to marinate the fish so allow about 2 hours at the least for marinating before dinner.
1/4 cup fresh basil leaves
1/4 cup olive oil
1/4 cup white wine
6 Tilapia fillets
1/2 tsp salt
1/2 tsp. pepper
1. Take the basil, 3 Tbs. oil and wine and process in a food processor until smooth. Rub the mixture over the tilapia.
2. Cover and let refrigerate for 2-4 hours.
3. Remove from fridge after marination at sprinkle with salt and pepper.
4. Heat 1 Tbs. of oil in a nonstick skillet over medium heat. Add Fish to skillet; cook 3-4 minutes on each side or until fish flakes with a fork.
Now for the side dish which in my opinion is the best part.
You will need
3 red bell peppers, cut in half lengthwise
1 1/2 lb. fresh green beans, trimmed
2 Tbs. olive oil
1/2 tsp. salt
1/2 tsp. peper
1. Turn the oven onto broil.
2. Place pepers, cut sides down, on a lightly greased baking sheet.
3. Broil for 4 to 5 minutes or until slightly charred.
4. Remove from oven and allow to cool slightly, cut into thin strips.
5. Meanwhile place green beans in a steamer over boiling water. Cover and steam 6 minutes or until tender. (YOU DON'T WANT MUSHY GREEN BEANS) People have a tendency to cook green beans till they are soft. You don't want this you want them to be slightly crunchy still.
6. Combine green beans and peppers in a bowl and toss to combine. Sprinkle with salt and pepper.
