So My husband and I use emeals.com for our dinners. It saves us a ton of money and trips to the store and makes us branch out and try new recipes. Now with this recipe I was super hesitant to try it. I hate butternut squash unless it's hidden in puree form in my food. I am not a huge fan of squash unless it's yellow summer squash. But I tried it anyway and I love it.
This recipe calls for whole wheat tortillas. I didn't have any left so I tried making some I used the 100 days of real food recipe and it turned out really well. I am normally not a huge fan of homemade tortillas but this recipe worked well for me.
For this recipe you need:
1/4 cup olive oil (divided)
1 lb. of butternut squash cubed (you can buy this pre cubed or buy a squash and do it yourself)
1/2 tsp. cumin
1/2 tsp. paprika
some salt and pepper
Whole Wheat Tortillas (8-inches works the best)
1 pkg baby spinach
2 cups freshly shredded white cheddar cheese (cheese that is pre shredded in the store is coated in flour to keep it from sticking together)
Heat 2 Tbs. of the olive oil in a large nonstick pan on medium heat. Add squash; sprinkle with cumin, paprika, salt and pepper and sauté 7 to 8 minutes or until browned and tender. Remove squash from skillet. Top one half of each tortilla with squash, spinach and cheese. Fold tortillas in half. Heat 2 tsp. of oil in skillet; add quesadilla (I was able to do 2 at a time). Cook until browned on each side and cheese is melted. Continue process for the rest of the quesadillas.
