I found these Muffins on pinterest. They are pretty awesome. I like wheat flour but I think these would be better with half wheat flour half white flour. The awesome thing is though that I put the Chia seeds in them and one muffin is plenty. Like the recipe said they aren't a sweet muffin. I love lemon though and it's spring time.
Blueberry Lemon Chia Seed Mini Muffins

Ingredients
- ½ cup vegetable oil (you could use applesauce to cut some of the fat)
- 1/3 cup Raw Honey
- ¾ cup Unsweetened Almond Milk
- 2 Eggs
- 1 teaspoon Pure Vanilla Extract
- 2 whole Lemons, zested and juiced
- 2 cups Whole Wheat Flour (or 1 cup white flour 1 cup wheat flour)
- 2 teaspoons Baking Powder
- ¼ teaspoon Baking Soda
- 2 tablespoons Chia Seeds (this was a lot you could probably get away with 1 Tbs.)
- ½ cup Fresh or Frozen Blueberries
Instructions
- Preheat oven to 350 degrees F.
- In a large mixing bowl, combine coconut oil and honey/agave. Mix in unsweetened almond milk, eggs and vanilla. Then lemon juice and zest.
- In separate bowl, combine flour, baking powder and baking soda. Gently mix dry ingredients into wet. Fold in Chia seeds and blueberries till combined. Do not over mix.
- Spoon batter into greased mini muffin tins. Fill each ¾ full. Bake 12-15 minutes. Remove from oven to cool.
