This recipe is so simple and so yummy. I love summer and the fact that zucchini grows so easily. Since it isn't summer yet I did have to go buy some zucchini. Originally this recipe was supposed to be stuffed zucchini, but since the ones at the store where to small I altered the recipe.
You will need:
6 zucchini
1 lb. ground mild Italian sausage
can of diced tomatoes
freshly grated Parmesan cheese
You are going to first cut your zucchini in half length wise. (or as children say hot dog style) Brush the insides of the zucchini with some olive oil and place on a grill at low heat. You want to grill your zucchini till they are slightly still firm. I am not a fan of mushy zucchini. It takes about 30 minutes on low. (The reason for low is to cook it all the way through without charring the outside.)
While the zucchini are grilling combine the sausage, 3/4 cups of tomatoes and 1/2 cup of Parmesan cheese in a medium bowl. Mix well and then put in a sauté pan and cook till well done.
Spoon the mixture over the zucchini and then sprinkle with fresh Parmesan.
Now onto the salad
This salad is quick and easy. What makes it really special is the homemade vinaigrette.
In a bowl place 10 oz. of spinach. Slice strawberries and place on spinach. Easy enough right?
Now take a mason jar (I like the small jam ones for this). Combine 2 Tbs. balsamic vinegar, 1 Tbs. honey, 1 tsp. dijon mustard, 3 Tbs. olive oil. Shake till well combined and pour over the salad. When plating the salad spindle some crumbled goat cheese on top. (If you're making this for kids I recommend leaving the goat cheese off. They won't like it.)
