My Kids wanted waffles today. They know my weakness. I have been avoiding my favorite breakfast for several weeks now because I am trying to be healthier. And lets just face it. White flour waffles are so amazing why would you change them. I have never made waffles from a mix they have always been something I have made from scratch and I have used the same recipe since my dad taught me how to make them. Why change when your happy with the end result?
Today I changed though and I was presently surprised.
Now I said healthier because they still have all-purpose flour in them but half as much. I didn't want to change the texture to much and color because I knew I would notice and my kids would and the healthy switch would fail.
So what did I do to make these waffles healthier?
Here's the recipe
Homeade HEALTHIER waffles
2 eggs
1 3/4 cups almond milk
1/3 cup canola oil
1 cup oat flour
1 cup unbleached all-purpose flour
Dash of Pure Stevia
4 Tsp. Baking Powder
Mix all the ingredients in a bowl till most lumps are gone. Place in waffle maker till slightly browned and crunchy.
