Spicy Couscous Salad


Do you want a quick lunch or even dinner? This salad has great flavor and a slight spice to it. The first time I made it it was a little to spice for me. 

First you need to cook the couscous

Second, add all the spices and other ingredients. The awesome thing about this salad is most these things people have lying around the house. If you don't just simply leave it out. 

Feta cheese, cucumber, garlic, green onion, mint, basil, cilantro, parsley, cumin, cayenne pepper,lemon juice.

Mix it all together.

I wanted a little more to it so I sautéed some shrimp in olive oil and sprinkled cajon seasoning on them. 

So Yummy.

Here's the simple recipe:

2 cups water
2 cups couscous
1/2 cup crumbled feta cheese
1/2 cucumber, diced
1 clove garlic, minced
1/2 cup chopped green onion
2 Tbs. Chopped fresh mint
2 Tbs. chopped fresh basil
3 Tbs. chopped fresh cilantro
1 Tbs. chopped fresh parsley
1 tsp. cayenne pepper
1 tsp. ground cumin
1 lemon, juiced

-Bring the water to a boil. Remove from the heat and stir in the couscous. Cover and let stand until the couscous absorbs the water; fluff with a fork.
- Move the couscous to a bowl and add all remaining ingredients and mix. 
-Really good to sauté some shrimp in olive oil and sprinkle with cajun seasoning for a dinner meal.
