So the first thing we need to do is cook our quinoa. It's just like rice. For every cup of dry quinoa you get about 3 cups cooked.
Take 1 cup quinoa and rinse it. If you have a mesh strainer that works perfectly. (If you buy boxed quinoa it has been pre-rinsed and is ok). Reason for rinsing is that quinoa has a bitter coating that sometimes can be tasted after cooking.
Dry your quinoa and place your rinsed quinoa in a sauce pan.
You are now going to toast it with a tablespoon of olive oil for about 1 minute. This will bring out that nutty flavor.
Once you toast it remove it from the pan. Place 2 cups of water in the pan and allow to come to a boil.
Once the water is boiling place the toasted quinoa into the water.
Now just like rice you are going to return it to a boil. Once it's boiling again reduce the heat to low, cover and allow to simmer for 20 minutes or until all the liquid is absorbed. Now fluff with a fork and you have quinoa.
