So yummy and healthy. This is the first time making this recipe. My personal preference is more banana flavor. So If you like more banana in your bread go ahead and try it and let me know how it turns out. Other than that the texture is amazing. I think I over mixed this batch because after I pulled it out of the oven it fell a little while it was cooling.
So Here's the Recipe:
First you will need
1 cup whole wheat flour
1/2 cup + 3 Tbs. White flour
1 1/2 tsp. baking powder
1/2 tsp. salt
2 bananas
1/4 cup honey
1 tsp almond extract
2 eggs
6 oz. greek yogurt
1 cup blueberries
First you want to combine your dry ingredients
Then you want to mash your bananas in a small bowl
Now place your mashed bananas in your stand mixer and add all your wet ingredients EXCEPT the yogurt and blueberries.
Mix Well.
Once you have mixed that well now you can add your greek yogurt.
Mix Well Again. This is what your liquids should look like after you have mixed.
Place the dry ingredients into the wet ingredients.
Mix just until combined. You don't want to over mix.
Now fold in the blueberries. Folding means to very gently fold the batter over the blueberries until they are distributed evenly.
Place the batter into a well greased bread pan and bake in a 375 degree oven for One Hour.
Bake until it is browned and a toothpick comes out clear when inserted. Remember when you are cooking with bananas it's going to come out darker than other breads. Allow it to sit in the loaf pan for ten minutes before removing to a cooling rack for remaining cooling time.
